In this 4-hour, introductory class, Aletha takes you through the pickling process from start to finish, with a special focus on local vegetables. Three different pickles will be prepared including a canned pickle, a lacto-fermented pickle and a quick pickle. We will examine key topics such as the role of vinegar, the importance of the brine and how to add it, spices and herbs, and canning safety. This class begins with pupus and a pickle tasting and discussion, then proceeds to the cooking process and dinner.
Each attendee will be a part of creating three different pickles and have the opportunity to take home three completed jars.
